Manicotti

Ingredients:
8 ounces Manicotti noodles
8 ounces Shredded Mozzarella cheese
15 ounces Ricotta Cheese
½  Cup Parmesan Cheese
1 Tablespoon finely chopped fresh parsley
¼  teaspoon salt
¼  teaspoon pepper
32 ounce Jar of Prego Spaghetti sauce (I use the Roasted Garlic)

Cook noodles by directions on the package and then drain. Cool on wax paper to avoid noodles from sticking.

In a mixing bowl combine all cheeses with salt, pepper, parsley together. Spoon the cheese mixture into noodles.  Put a small amount of sauce in the bottom of a 13 X 9 casserole dish. Arrange manicotti in single layer over sauce. Pour remaining sauce over the noodles and sprinkle additional parmesan cheese over top. Cover with aluminum foil and bake in preheated oven at 325 degrees for 40 minutes. Cook additional 15 minutes uncovered. This recipe makes 6 to 8 servings.
