Chicken Nachos

Ingredients:

1 can of refried beans

2 boneless chicken breasts

Salt and pepper to taste

1 teaspoon of garlic powder

Corn chips

2 green onions chopped

Jalapeno slices

Mozzarella cheese

Guacamole dip

Tomato, chopped

 

In a pan of water boil chicken breasts until done.

Drain and cut into cubes. Add salt, pepper and garlic powder.

I usually make more chicken than I am going to use, then put

the unused portion in a freezer bag and use it for making a

quick snack at a later time.

 

Preheat oven to 350. (You can make these in the microwave

but they are not as crunchy).  Spread tortilla chips out on a

cookie sheet. On each tortilla chip spread a small amount of

refried beans, mozzarella cheese, a jalapeno slice, chicken

chunks and heat till cheese is melted.  Take out of the oven

and add a spoon of guacamole to each tortilla chip.

Sprinkle green onion on chips and then garnish with a chunk

of tomato. Serve immediately.
